Thai Inspired Peanut Noodle Salad

Prepare the Noodles: Cook the noodles according to the package instructions (usually a quick boil or soak). Drain and rinse thoroughly with cold water to remove excess starch and prevent sticking.

Whisk the Sauce: In a medium bowl, whisk together the peanut butter, soy sauce, vinegar, maple syrup, lime juice, ginger, garlic, and sriracha. Add warm water one tablespoon at a time until the sauce is smooth and pourable.

Assemble: In a large mixing bowl, combine the cold noodles with the shredded cabbage, carrots, bell pepper, and scallions.

Toss: Pour the peanut dressing over the salad. Use tongs to toss everything together until the noodles and vegetables are fully coated.

Finish: Top with a generous handful of cilantro and chopped peanuts for crunch.
