A delicious vegan Jerk Lentil Burger served on toasted breadfruit buns, accompanied by crispy Hawaiian plantain fries and a creamy soursop aioli. This Caribbean-inspired dish offers a unique blend of spicy and sweet flavors.
JERK BURGER:
1. Preheat oven to 425°F (220°C). Sauté diced bell peppers, minced white onion, and minced garlic in a pan until fragrant and translucent. Set aside.
2. Add raw walnuts to a food processor and pulse until fine and grainy. Add cooked lentils and pulse until a dough-like mixture forms.
3. Transfer the walnut-lentil mixture to a large bowl. Add the sautéed pepper/onion mix along with panko, spelt flour, all purpose seasoning, jerk seasoning, sazon, black pepper, a pinch of salt, green sofrito, jerk marinade, and ketchup. Mix thoroughly until well combined.
4. Form the mixture into patties. Place patties on a baking tray lined with parchment paper, sprayed with a little oil to prevent sticking.
5. Bake in the preheated oven for 25-30 minutes, or until crispy and beautifully brown, flipping halfway through. Set aside.
SOURSOUP AIOLI:
1. Add lemon juice to minced garlic and let it sit for 10-15 minutes.
2. Cut and deseed the small semi-ripe soursoup, then scoop out the flesh.
3. Press the lemon juice through a strainer into a blender, ensuring to get all the juice.
4. Add the soursoup flesh and small amounts of water at a time to the blender. Blend until creamy and smooth.
HAWAIIAN PLANTAIN FRIES:
1. Cut and peel the Hawaiian plantain. Slice into small fry-sized pieces.
2. Fry the plantain pieces in cooking oil until crispy and golden. Remove from heat and top with salt.
3. (Optional Scotch Bonnet Ketchup) Mix scotch bonnet hot sauce, ketchup, and maple syrup together for a spicy-sweet condiment.
BREADFRUIT BUNS:
1. To cook the small ripe breadfruit, you can either roast it in the oven or microwave it. For the microwave method, place the breadfruit in a shopping bag, tie it tightly, and microwave for 10-15 minutes or until soft.
2. Once cool, peel the breadfruit and slice it into thick pieces.
3. Fry the breadfruit slices in cooking oil for 30 seconds to 1 minute, flipping to toast each side.
