Grilled King Oyster Mushroom Ceasar Baguette

Preheat oven to 400°F. Line a baking pan with parchment paper. Gently cut the top off of a fresh garlic bulb. Peel any excess skin off. Place garlic in a piece of foil. Drizzle with avocado oil, and sprinkle with salt, pepper, and dried parsley (to taste). Close foil tightly and place on baking pan. Bake for 40-45 minutes. Remove from oven and let cool.

Rinse oyster mushrooms and dry. Cut 1/2 inch thick strips length wise. Place pieces on a large plate or mixing bowl. Drizzle with avocado oil and seasonings (poultry-pepper). Coat each piece well. Heat a grill pan (or you can use an outdoor grill). Add mushrooms to pan and grill on each side until golden and sexy. Remove from heat.

Add all the "vegan ceasar" dressing ingredients (plain hummus, dijon mustard, lemon zest, juice of half a lemon, capers, roasted garlic, 2 tbsp avocado oil, salt & pepper to taste) to a food processor. Pulse until ingredients are fully combined. Adjust taste and consistency to your preference.
